CSA Farmers Market:  SUMMER SQUASH SALAD


GREAT WITH KEBOBS!

Serves: 8
20 mins Prep time

Ingredients
1/3 cup olive oil
1/8 cup fresh lemon juice
1/4 cup vinegar (red or white)
1/2 teaspoon salt
1 Tbsp Slow Dog Pork Seasoning (multi purpose?)
1/3 cup crumbled feta cheese
1 large yellow squash
1 large zucchini
1 cup chopped beet tops (leaves and stems-rinsed well)
1 cup seeded and chopped tomatoes
1/4 cup thinly sliced sweet onion (walla walla)
DIRECTIONS

• For the Vinaigrette, mix oil, lemon juice, vinegar and seasonings in small bowl with wire whisk until well blended. Stir in feta cheese and chopped beet tops. Set aside.
• For the Salad, trim squash ends. Slice into ribbons with vegetable peeler-discarding outside ribbons and core.
• To serve, place squash ribbons on each salad plate. Use tongs to place beet tops/ feta over squash. Top with tomatoes, and onions. Drizzle remaining vinaigrette over each plate.

We have a brand new vendor with us with really amazing soy candles!! She is new to the farmer’s market circuit, and she has a cool little story behind her candles…

Here is Cathy Ream…

I have been a resident of Champaign County my entire life(50+ years). I established Old Homefarm Candles because I like candles and wanted to have a hobby/business for my future retirement. The name Old Homefarm Candles was chosen, because after attending college and getting married and starting a family, my husband and I returned to my parents’ farm where I was raised and built a house where we now live.

Old Homefarm Candles has been making and selling homemade scented and decorative soy wax candles since 2013. They are sold at the monthly Champaign County Flea and Antique Show, The Depot in Lakeview, Ohio and at several area craft shows or festivals. The homemade scented 16 oz. mason jar candles are richly scented,and long and clean burning, poured with 100% natural soy wax from soybeans. Also sold are 6 piece clamshell wax melts for electric, battery and tea-light burners. These are poured with a 100% soy wax also, specially formulated for melts. Some decorative candles include pies, and drinks and may be poured with gel wax. All are scented with the maximum amount of scents recommended by the scents manufacturer.

Last night, I sent the market Weblog announcing that the Herrs would be bringing their fresh peaches to the lobby, this evening, at market pick up, for any customers who want to purchase.

I forgot to mention that they will also be at this Saturday’s Champaign County Farmer’s Market with peaches…

You can get them from tonight’s market pickup, you can go to the Champaign County Farmer’s Market, on Saturday, or you can come to the Mechanicsburg Farmers and Artisans market, as usual, to get their peaches and produce, on Tuesday evenings.

If something comes up that you cannot personally pick up your order today, please contact someone to pick up for you.

Remember to bring your glass jars for recycling, egg cartons, and bags for ordered items. Reduce, reuse, recycle! See you this afternoon.

Hi! This is Iris. Some of you remember me from when I worked Market between Debbie and Cheryl, and some of you have seen me over the last couple weeks. I’m looking forward to meeting the rest of you very soon!


Salmon Update!




What’s up with the Salmon?
The salmon are running and Bill from Back in Time Farm will be supplying Alaskan Wild Caught salmon through his son, Running Wild Alaskan Seafood, LLC. He has left for Homer, Alaska and will be back with salmon and have it posted for the Market opening on Thursday, August 6th. It will be open to order then but we will be notifying and watching for those who were on the list to make sure their orders are handled first. You may continue to order after the first week until the supply runs out. I’m being told that there may be a chance for a second catch to be added but not guaranteed yet. So if you are wanting salmon, I recommend purchasing while you have the chance.
This deliciously fresh salmon is carefully selected directly from the fishermen’s nets from the cold Alaskan waters before it ever enters the ship’s hold. Only the best is chosen to become part of " Running Wild Alaskan Seafood’s" premium offerings. The fish is immediately bled and iced down before making the short boat ride to the processor located in Homer, Alaska. Here it is quickly processed and flash frozen (to ensure freshness) then packed into coolers for the overnight trip to Georgia. This is the freshest salmon available without going to Alaska to catch it yourself. Red Sockeye salmon is packed with flavor and nutrition.
We are within a week or so of having this salmon at our very own market! The packages will be in a couple different ounce packages and range in prices based on $19.00 a pound.

So…here is some excitement!! Tomorrow, in the YMCA lobby, we will have Herr Family Farms set up with all of their fresh orchard peaches!

The Herrs are vendors for me at the Mechanicsburg Farmers and Artisans Market. We would like to see them join our virtual market family, they have a HUGE abundance of peaches, both white, and yellow, and we have invited them to join us, tomorrow, to sell peaches!!

If you are a customer with an order, come early to make sure you don’t miss out. Bring extra cash as they will be operating on their own, and NOT through our system with the YMCA. If you did not place a weekly order, make sure to get to the lobby to get your peaches!

I can tell you that I have purchased their peaches for the past two weeks and they are THE BEST!!!

So, make plans to storm the lobby, tomorrow, at order pick up. Grab your market orders, and/or, get in line for your fresh peaches!
